~ Celebrate Cinco de Mayo ~ Chicken Quesadilla (Best lunch EVER!)
By now the statement above should be evident I’ve even gone so far as to order mini packs of the Beanfields chips to have with me when I travel and go out to Mexican restaurants so I don’t have to have corn chip envy. It’s official…..I have become that weird lady that takes her own food everywhere. I am fine with it and I don’t get sick.
But let me tell you about my Mexican “outing” today. I’ll start by saying I have a love/hate relationship with Aldi. I love some of their weird and wacky bargains but I HATE the stores, I HATE the way the checkers throw things at you after they’ve scanned them, I HATE that I go in there for 2 things and then end up with bags full and am that shopper that the rest of line are rolling their eyes at as I didn’t get a cart (and the checker is throwing things at me that I can’t bag fast enough), and I HATE that I get sucked in every-single-time I go in there!
I had 2, yes two things to get at Aldi. Buttermilk and cooking oil. Buttermilk and cooking oil. Buttermilk and cooking oil. Well, Aldi had a ton of Mexican items and serving ware today and I did end up getting a cart which I filled with these things that contribute to my dinner set obsession. $90 later I walked out without the buttermilk and cooking oil! I was not going back so they will just have to wait.
After my excursions today (I also went to the specialty food supplier and discovered a secret cheese room!) I wanted something hot and I had a few leftover tortillas in the freezer along with some grilled chicken breast and I haven’t had a quesadilla in about 100 years 6 weeks.
Again I went to my trusty Sunbeam cafe grill and put one tortilla on the hot plate
layer on that chopped or shredded chicken warmed up
the crowning glory of finely grated cheese
another tortilla to top it all off, thank you very much
and close the press until it is grilled to your perfect grillness (is that a word? I keep getting a red line so I’m guess not but let’s pretend it is today!)
Serve with salad, slaw, sour cream and salsa for a quick lunch that will curb the Mexi Munchies! (PS – I don’t know why my photos go all funny shaped below! It’s making my crazy so if anyone has any suggestions please let me know!)
