Celebrate Cinco de Mayo ~ Mid Week Mac ‘n Mexican!
Today’s mid week makeover comes to you from that EVIL genious at Oh Bite It. In her recipe for these AHmazing (and surprise) burritos, she even says she has lost her recipe creating mind. After you make these, you’ll be glad she did!
Now, I know I’ve told you that I continue to search for that perfect one and only gluten free mac ‘n cheese recipe. We’ve come close but I still continue to search and test……which never has anyone complaining at our house since it is a family favourite. ♥
There was a little bit of leftovers from a previous quick stovetop dinner and then I saw THESE from Amy at Oh Bite It. Oh Mama….get in my belly right now was the shout from myself and the dancing daughter.
Mac ‘n Cheese Burritos ~ (makes 4-6)
Recipe from Oh Bite It
4-6 homemade (or store bought) gluten free tortillas
Leftover cooked Mac-N-Cheese
1 cup of salsa
Oil for frying
Warm the leftover Mac ‘n Cheese and add some milk if it is too solid.

Place a line of the Mac ‘n Cheese down the centre of a Tortilla and roll it up.
In a shallow frying pan, fry each Burrito up in about 5-6 cm of Oil. Place them seam-side down to start. Fry them until they’re golden on all sides.
Let them cool slightly on paper towel.
Serve warm with salsa and sour cream.
