Celebrate Cinco de Mayo ~ Road Test Tuesday Beanfields Tortilla

Chips!

So today I went back to my Dietitian/Nutritionist for a check in on how things are going.   I was a bit worried that she would want to start chemical testing (she doesn’t test with foods but the chemical reactors) as I am just starting to feel better and am certainly not strong enough yet for testing.  Thankfully, she wants me to be on complete Failsafe for 3 months before we start supervised testing.  I was very relieved!

But one of the things that must be eliminated is corn.  Ummm, so if I can’t have corn tortilla chips when we go out for Mexican (or stay home for that matter!), what can I have?  Sadly when I went to Mexican with my Dad last month I took my own Vege Chips which certainly did NOT hit the spot.  When we were in Hawaii, I did eat corn chips and felt horrible for doing so.

So imagine my surprise when I spotted THESE babies at our local Woolworths! Beanfields chips!

Although they are gluten free, corn free, vegan, natural etc., they are super delicious!  Made from beans and rice, the sea salt flavour have no seasoning and are completely safe for me.  They are delicious!!!!

I made a quick batch of “refried” beans out of my Coles Organic Four Bean Mix by draining and rinsing the beans and popping them in the mini food processor.

Process until smooth and add a small bit of hot water to desired consistency

Serve with the amazingly wonderous non-corn chips as a dip and enjoy!

Beanfields Bean &  Rice Chips Verdict– 9/10
I’m so happy I found these chips!  I was in complete despair that I would never again be able to sample the deliciousness of Mexi Chips and Dips and my taste buds are thrilled!  They are available at Woolworths in Sea Salt and Nacho flavour (which the dancing daughter said were “actually really good”).  Other flavours are available in the USA as well as smaller snack size bags which you will need if you are anything like me and can’t put the bag down once you open it.
