Celebrate Cinco de Mayo ~ Muffin Monday Tortilla Cups!
Happy Cinco de Mayo! Remember when I made homemade flour tortillas and everyone at the table fought over the last one? Well, I made a double batch this weekend and even managed to hide save some to use for recipes this week. I know that dinner is good when the dancing daughter has some in her mouth and slowly nods her head up and down with a “mmmmm” accompanied. The six foot teenager asked me via text what was for dinner (weighing up his options!) and did come home and cleared his plate as well.
These are super fast and a great way to jazz up either homemade tortillas or gluten free corn tortillas (*warning ~ Woolworths brand were not gluten free last time I checked so go with El Paso for safety). I know this recipe isn’t technically a muffin for Muffin Monday but it does use a muffin tin!
Tortilla Cups ~ Makes 8
8 x homemade or store bought mini tortillas
Choice of meat ~ Mexican mince or one of the slow cooker Mexican Recipes
Lettuce, salsa, cheese, sour cream
Refried beans and rice for sides
Cooking spray
Preheat oven to 220° or 200° for a fan forced oven.
Gently warm the tortillas in the microwave for approximately 30 seconds until warm and pliable. Spray each side with the cooking spray.
Gently push the tortillas between the upside down muffin cups (you can use some drops of water to soften if they are not pliable enough). Ensure you form the bottom to the pan to create a flat surface for your Tortilla cup.
Bake in the oven for 8-10 minutes until browned.
Remove and serve immediately at the table with bowls of fillings so everyone can make their own. Muy Bueno!
